Stir Fried Bitter Melon with Beef Fat
I love bitter melons. There is seruoisly nothing that taste quite like it. My favorite ones are the deep green spikey variety from Taiwan and Okinawa.
Instead of finding ways to remove the bitterness, I think it is a better option to enhance their flavor with fat.
You really have to try this stir fried bitter melon recipe to get exactly what I mean. To make this in to a main course, add marinated slice beef to this stir fry.
How to Grow Bitter Melons
I used to grow them in the garden but the last harvest was unfortunately eaten by wild boars. I guess they find them equally tasty as I do. Nevertheless, I am not giving up. I will definitely plant more when the time is right.
The bitter melon plant is quite finicky. You have to make sure the soil is well wetted and the temperature just right or it won’t germinate. They thrive in rich moist soil.
Bitter Melon Fried in Beef Fat Recipe
This simple recipe is full of flavor. It is perfect as a side dish in the summer .
2 medium size bitter melon, thinly sliced
3 tablespoons of beef fat cut into small pieces
2 cloves of garlic
1 teaspoon of sugar
Salt to taste
How to Cook Bitter Melon
1. Heat up a frying pan or wok.
2. Add the beef fat. When it starts sizzling and turning golden brown , add in the bitter melon. Add sugar.
3. Stir fry for 5 minutes until cooked but still firm. Add salt.
4. Serve

- You can use the fat trimmings from your steaks. It can be kept in the fridge, in an air tight box for a week. You can usually get beef fat from the butchers for no charge.
- The leaves of the bitter melon plant is edible and very delicious when added to an omelet.
