Golden Omelette with Fresh Bean Sprouts

l love fresh bean sprouts!
I love their crunch, their sweetness and how perfect they are in most dishes either cooked or raw.  But if I had to choose one dish, it will have to be a pan fried golden omelette with fresh bean sprouts. This light and healthy recipe is my go to when I am short on time or when I need to add a last minute side to a meal.

How to prevent the bean sprouts from making the omelette wet and soggy? Cornstarch and a very hot pan will solve this issue.

I like to keep the omelette small so I use 6 inch non stick frying pan. But you can always double my recipe to make a larger one.

Adding more oil when frying will give the omelette a bolder golden color and a slight crisp.

Prep time : 10 minutes,  cooking time: 10 minutes

Golden Omelette with Fresh Bean Sprouts Recipe

Ingredients

1.5 cups of fresh bean sprouts, washed and drained dry.

1 teaspoons of cornstarch

2 extra large eggs
1/2 teaspoon salt
White pepper to taste
A dash of sesame oil

2 shallots, chopped
1 clove of garlic, minced

2 to 3 tablespoons small dry shrimps, lightly toasted for more flavor.

1 tablespoons toasted white sesame

Chopped spring onion for garnish , optional

Cooking Method

1. Add cornstarch to the beans spouts. Mix well.

2. In a small bowl, add the eggs, salt, pepper and sesame oil. Mix well. Set aside.

3, In a small frying pan, over high heat, add cooking oil.   Add shallots, garlic and cook lightly. 

4. Place a even layer of bean sprouts in to the frying pan. Stir fry lightly.

5. Add dry shrimps, fry lightly.

6. Pour the egg mixture over the bean sprouts.  Roll it around the pan. Sprinkle sesame seeds over the egg mixture. Wait for it to set, around 2 to 3 minutes.

7. With a large spatula,  flip the omelette over and cook for another 2 minutes until done.

8. Garnish with spring onions and serve with a little fish sauce for added flavor.

Adaptation Ideas:

  • Turn the omelette in to a cold dish by adding some fresh veggies on top and dress it with a dash of fish sauce, a squeeze of fresh lemon juice and some olive oil.
  • Add fresh herbs for an extra kick. My favorite is basil. So fragrant!
