Stir Fry Pumpkin with Bean Thread Noodles
Fermented black beans makes this dish extra special. If you have never used it for cooking before, this recipe is an easy way to start.
I love autumn time! I have been having so much fun experimenting with pumpkins that are coming out now. I especially like the small flat ones, about 1 kg each. They have a sweet and nutty flavor similar to chestnuts. It can hold its shape even when it has been cooked soft so it is perfect for stir frying. In this recipe, I paired sweet pumpkin with bean threads that soaks up all the delicious flavors of the aromatic black beans.
This is a easy and straightforward recipe. I think the hardest part would be cutting the pumpkin. Watch your fingers!
Stir Fry Pumpkin with Bean Thread Noodles Recipe
Prep time: 15 minutes
Cooking time: 15 minutes
Ingredients
oil for stir frying
3 cloves of garlic
1 small pumpkin, about 4 cups, cut into cubes
1 small package of bean thread noodles, soaked soft in water, drain
1 cup of water
1 1/2 tablespoons of fermented black beans, adjust to taste
1/4 cup of small dried shrimps, toasted for extra flavour
1 teaspoon of fish sauce
salt and white pepper to taste
2 long green spicy peppers (optional)
Cooking Method
1. Place a wok or frying pan over high heat. Add oil when pan is hot. Add garlic and stir fry lightly until fragrant.
2. Add pumpkin, stir fry for about 5 to 10 minute until it turns 80 percent cooked. It should be firm,not soggy.
3. Stir in black beans and dry shrimps.
4. Stir in bean threads. Mix the ingredients evenly.
5. Add water a little at a time. The bean thread would soak up the water as it cooks. Cover and cook for a few minutes until pumpkin is fully cooked.
6. Add spicy peppers (optional).
7. Season with white pepper and salt
8. Serve
