Roast Peking Duck with Lettuce Wraps
Whenever we have roast peking duck at a restaurant, it puts everyone in a joyous mood. I guess it feels like a celebration because it is usually eaten with a large group of people using hands, often making a mess and lots of laughter to go with if. Since we can all do with some cheering up I decided to try it out at home.
I have been eyeing a roast peking duck recipe for a while. It was created by a chef that belong to the same FB cooking group. It didn’t look too hard though there are quite a few steps to follow. So with a hopeful heart, I went to the market and bought everything I needed and prepped for two days. It turned out beautifully.
I tweeked the recipe a bit because the duck I got was rather big, over 1 kg. So I double the dry seasoning and rubbed the duc all over with it and let it marinate for a whole day, uncovered in the fridge before giving it maltose baths the next morning. I layered the bath a few times in between drying to give it extra color. I roasted the duck for an extra 15 minutes too.

Since there were only three of us eating the duck, we had tones of left over. Perfect for lettuce wraps.
Roast Duck Lettuce Wrap Recipe
Prep time: 30 minutes
Cookinh time: 10 minutes
Serve 6
Ingredients
Cleaned and dry lettuce leaves
Cucumber sticks
3 tablespoons cooking oil
3 cloves of garlic minced
2 tablespoons minced ginger
3 cups minced duck Meat
2 cups water chestnuts minced
3 large dry Chinese mushrooms. Hydrated and minced
1/2 cup of Chinese pickles
1/2 cup of toasted pine nuts (optional )
2 tablespoons oyster sauce
1 tablespoons light soy sauce
2 teaspoons sugar
2 teaspoons white pepper
2 teaspoons shoaxing wine
Salt to taste
1/4 cup of chopped spring onions
Toasted sesame seeds
Serve with Hoisin Sauce, Hot Sauce or Pickled Chilli
Cooking Method
1. Add cooking oil into a heated wok. Add in ginger and garlic, fry lightly until fragrant.
2. Add minced duck meat, stit fry and toss over medium high heat. Add rest of the ingredients in the order they are listed. Add spring onion just before serving.
3. Garnish with sesame seeds.
4. Serve with lettuce, cucumbers and choice of sauce.
As much as I love duck, I sometimes need something to take away the gamey taste. I made pickled chilli to go with it and it enhanced the flavors so well, I am going to serve it with duck every time.
The beauty of the recipe is that you can use store bought roast duck to save lots of time.
